Just enjoying one the last bottles of a batch of nettle beer I brewed a couple of weeks ago. I highly recommend trying it - really refreshing in warm weather. Very simple to prepare:    1 kilo approx. of nettle tops, washed 4 litres water
 1 lemon, juiced
(plus the rind) 750g of sugar
25g of cream of tartar ale or bread yeast    You bring the nettles, sugar and water to the boil in a big stockpot. Chuck in the lemon juice and the peel. Simmer for half an hour then leave to cool. While still warm (but not hot) strain into fermenting bucket or demijohn. Add the cream of tartar and pitch the yeast. Fit an airlock.    Ferment at room temperature for 6 to 8 days, then bottle and store in the fridge.   A great drink after a hard day's graft at the allotment. I have found it improves after about two weeks in the fridge: it is still fermenting slowly, and the CO2 dissolves in the beer, giving a nice sparkle and a crisp taste.   Somewhere between a Belgian white beer and a cider in taste and effect. Really recommend!   I'll be making another batch soon - no shortage of nettles to harvest...

@JockBudman    im the same must have atleast 100 if not more seeds in the fridge but still stuck to the same strain for the past few years I don’t think I will ever be able to try them all out in a lifetime sadly. Plus with all the new strains being pumped out daily I’ve lost interest in chasing the new best thing.  My one and only goal was to find the original old school cheese that you could smell a mile away scrunched up in tinfoil in someone’s sock but that’s long gone I believe.
