I've never eaten one straight from the river, but I bought a couple in Poland....one for Christmas Dinner...
At the market they sell them in tanks of clean fresh water, and you take them home and keep them live in your bath till Christmas Eve.....this acts as a kind of purge, and gets rid of any muddiness to the flesh....very very tasty fish, and if you handy with a fillet knife the bones ain't too bad either......
Got a taste for pike while I was over there too, don't do brown fishing meself, but got a mate over here goes pike fishing in the winter, and always saves me a couple....again, really tasty, and once you've dealt with a couple, filleting becomes quite easy.....
Neither pike nor carp is a patch on perch though, now there's a tasty fish!!!
Never tried zander, but a mate of mine reckons its similar to cod?? Anyone here eat zander?
