Water is classed at soft if the ppm is below 125.
RO water's ppm will be close to, if not 0.
When growing organic and not PH'n, water this pure/soft has little if any buffering ability and if you relay on the soil/compost to buffer your non-ph'd water/feed it wont.

When growing with hydro, you still need to supplement RO water for the lack of CalMg but
the PH issues will not occur as the reservoir will be PH'd.
Similar story with non-organic nutes, you'd be PH'n your water, but lack of CalMg can be a problem.
Some folk never get issues due to what else they put into there water when feeding.
Some products contain enough CalMg & trace elements etc... that a deficiency doesn't occur.
