I had to share this meal with you all. I first tried it from an Ethiopian stall afew months back and WOW what a meal. Almost the next day I was searching online for an authentic recipe so i could create this at home and eat it as much as i like. After some serious searching i found a recipe that ticked the boxes.
I now eat this meal nearly everyday
You're going to need:
2 and a half large white potatoes, peeled and each potato chopped into 4 pieces and the half potato diced into cubes
1/2 lb. green beans, cut into 1-inch sections
1 medium onion, chopped fine (don't cry)
2 cloves garlic, minced
1 small jalapeño seeded and minced
1/2 teaspoon turmeric
1/2 teaspoon ground cumin
1/2 teaspoon salt
1 can of chopped tinned tomatoes
1/2 teaspoon fresh lime juice
A hand full of peas. Note this is my added ingredient you don't have to add it.
Bring enough water to cover the potatoes to a boil in a medium saucepan, and place the potatoes in. I also chuck in a hand full of peas but thats up to you. Cook for 12 minutes over high heat. Add the green beans and cook for 5 minutes more. Drain the potatoes and green beans, place the lid on the pan ( while holding it on) and shake the pan backwards and forwards for about 7 seconds, this will fluff the potatoes up nicely. Then just place to one side.
Next heat a large frying pan with a little oil and also a dash of olive oil, when hot add the onion, garlic, and jalapeño, fry for about 4 minutes stirring occasionally, adding a little water if necessary to prevent sticking but you should be ok. Stir in the seasonings and fry for 1 minute more, at the end of the minute pour a little water over the onions garlic jalapeño and seasonings this should create a nice little cloud come up that smells epic then immediately add the potatoes the bigger ones first and turn them over so they are coated abit then add the green beans, chopped tinned tomatoes, and lime juice and cook for 7 to 10 minutes more over medium heat, stirring frequently.
And thats it, it's a quick meal, ok the prep can take a lil long but it's well worth it. It goes well with a salad of lettuce, tomatoes, onion and olive oil mixed well and a sprinkle of hemp seeds over the top.
