This series is pretty awesome. I'm sure there's room to do a third and fourth set. If I can suggest a few more kooky ones;
1) If you have Jedi, you need Sith, a schismatic minority of a minor minority!
2) The Church of Eris Discordia - based on the writings of Robert Anton Wilson.
3) Thelemists - We're not Satanists, honest!
4) The Church of the SubGenius - founded by a guy from Devo for a laugh.
5) Definitely need some adherents of the Flying Spaghetti Monster.
6) Those weird latter-day Viking guys, Odinists or whatever.
7) Shintoism and other animist ones.
8) Confucianism and other philosophical ones.
9) magical ones like Theosophy - from old Madam Blavatsky, and Order of the Golden Dawn - Crowley's old posse.
