As long as your temps are about 70 ish F, humidity below 50%, your buds ought to be dried about ten days into drying.

Stems ought to snap, they may hold on with the fibre, but if it bends its not dried.

You ought to be fine. You can always snip off buds from colas to get a few early buds that are dry.

I'm drying also so in the same boat. I've never lost drying bud to mould as the temps and humidity ought to be always adhered to.

I dry hanging and also snip some buds wet and place them on newspaper in some bowls and trays. I don't even turn them.

Depending on weather, it will take me a week to ten days to dry usually. Smaller buds ready in a few days.

Trim, if any, ought to be dry after 3-5 days. That way you can get some hash. :)

Good luck, I'm sure your crop will be fine drying in this weather right now.

Give it 2 more days then jar it and burp the jars every day for a week for about 10 minutes.
