Simply remove the small grow tip only leaving the 2 little shoots at the sides of it, job done. There is no need whatsoever to remove inches from a plant when topping.

Thanks @Larry Badgeley. My nearest oriental supermarket is about a 25 mile round trip away, so I'm hoping I can get the lime leaves in the supermarket in a bit.

I voted for @tokenroll Gorilla, I think this is a lovely photograph and the depth of feild technique he has used makes it look the pistils are swaying in a gentle breeze. Its taken me a while to decide between this and @delagdo Jack 47 Auto, both are quality photos and I cant believe they both have so few votes.   As usual though everyone is a winner who gets an entry into the Cream of Crop competition. Good luck everybody.

Lime leaves we buy from the Chinese Supermarket in the frozen section. Tamarind Paste also but most supermarkets generally sell it. If you can't find Kashmiri chillies then use ordinary dried ones preferably the big long chillies.   The Rendang last evening was beyond wonderful. Coconutty and spicy. We make as per size and freeze the rest for 2 more sittings. This is a rich curry and you don't need much until you're fat as a don't know what.
